What you’ll need

Ingredients

  • 1 × 250g punnet Farmer Tom’s lion’s mane
  • 1 tbsp olive oil
  • 25g butter
  • 1 garlic clove, lightly crushed
  • 3 sprigs fresh thyme
  • ½ lemon
  • Sea salt and black pepper

Into the pan

Method

  1. 01

Brush away any loose growing material, then slice the lion’s mane into steaks about 2cm thick.

  2. 02

Warm a heavy frying pan over a medium-high heat. Add the olive oil, then lay in the mushroom steaks without crowding the pan.

  3. 03

Press gently with a fish slice and cook for 3–4 minutes, until deeply golden. Turn and cook the other side for 3 minutes.

  4. 04

Add the butter, garlic and thyme. Spoon the foaming butter over the mushrooms for 1–2 minutes, then season well.

  5. 05

Finish with lemon juice and serve straight away.
